Now very popular but in very limited numbers, we also a few boneless hams, approx 2 kg, making them the perfect size for a smaller Christmas gathering or even as a beautiful Christmas gift. There is a choice of either the Farmstead Nitrate Free or Traditional methods.

Farmstead Hams

Our nitrate-free hams are smoked over local Red Gums. Being nitrate-free, they are very much Farmstead style hams – pale in colour (think light roast beef colour with a touch of pink) and with a much more delicate smoky flavour than traditional hams. These are exceptional hams that really bring out the flavour of the pork and are much less salty than traditional hams. These are also gluten-free and free from any nitrates and chemical preservatives.

Traditional Hams

These hams are prepared in the traditional manner with minimal preservatives, gluten-free and smoked over local Red Gums. They are the traditional pink colour and have that slightly salty stronger flavour. They are also smoked with Red Gum.

All our hams are from our beautiful Berkshire pigs with the only difference being the two hams is the method with which they have been cured. Our pigs are born and raised outdoors on our regenerative farm munching away on their chemical-free “salad bar” pastures, digging in our mineral-rich volcanic soils along with delicious whey from Goldfields Farmhouse Cheese.

Upon ordering and full payment for your boneless ham, you will be asked to advise your preferred collection point. Collection dates are firm and hams won’t be available any earlier.
